Healthy, hardy, filling soup. What more could you ask for?

I struggle with healthy eating during the cold winters in Upstate NY. My insides are craving something that will warm me from the inside. Salad just wont do when I am freezing.

This recipe (with improvisations) has been a staple for me all winter. I make a big pot (double this recipe) of soup and store it in a gallon pitcher in the frig.

Hearty Soup w Veg Broth, Potatoes & Broccoli

Saute 1 onion in olive oil in a soup pot.

When onion is browned, add 2C veg broth & 2C of water. Bring to simmer.

Add 3 quartered Yukon Gold potatoes.

Season with 1 tsp each of thyme, rosemary, paprika, oregano, coriander and salt.

Add 3 cups of broccoli. (frozen or fresh)

When potatoes and broccoli are very tender, remove from heat.

Using either an immersion blender or counter blender, process till all veg are pureed and the soup is smooth. If the soup is too thick feel free to add more broth or water.

Feel free to add more vegetables or proteins after the broccoli and potatoes are pureed.
